Cake Doughnuts

Combine:

4 egg yolks or 2 whole eggs, well beaten

1 cup sugar

2 Tbsp. soft shortening or oil

3/4 cup milk


Combine separately and Add:

3 1/2 cups flour

4 tsp. baking powder

1/2 tsp. salt

1/4 tsp. nutmeg

1/4 tsp. cinnamon


Add more flour if necessary. Roll out and cut doughnuts. Fry in hot oil until brown. Drain over kettle, then on absorbent paper in a warm place. Serve plain, sugared, glazed with grated coconut or crumbs.
