Cherry Coffee Cake
Ingredients:
4 eggs, beaten well
1 cup cooking oil
1 tsp. baking powder
1/4 to 1/2 cup cinnamon and sugar mixture
1 (21-oz) can cherry pie filling or any fruit filling
1 cup sugar
2 cups flour
Dash of salt
Directions:
Combine all ingredients except for the pie filling and the cinnamon-sugar mixture.
Spread 1/2 of the dough into a greased 9x13" pan. (Mixture is quite thick). Spread
pie filling over dough but not quite to the edges. Dot remaining dough, spreading
to cover filling. (Work from edges of the pan to the center). Sprinkle with the sugar
mixture. Bake 40 minutes at 350. When taken from oven, drizzle powdered sugar frosting
over the top, if desired.
