Mom’s Chicken Pot Pie
Ingredients:
4 cups chicken broth
1 cup boiled chicken, diced
1 cup potatoes, cooked and diced
1 cup corn
1/2 cup peas
1/3 cup carrots, cooked and diced
Directions:
Combine all ingredients in large saucepan; heat to boiling. Pour into 9x14 inch casserole; top with biscuits. Bake at 350 for 10 to 12 minutes or until biscuits are lightly browned.
Biscuits:
2 cups flour
3 tsp. baking powder
3/4 tsp. salt
1/3 cup shortening
2/3 cups milk
Combine flour, baking powder and salt; cut in shortening. Add milk; mix until blended.
Roll out on floured board; cut into biscuits.
