Chocolate Chip Peanut Brittle Bites

Ingredients:

1/2 cup butter, softened

1/3 cup shortening

1 cup packed brown sugar

1/2 cup granulated sugar

1 tsp. baking soda

1/2 tsp. salt

2 eggs

2 tsp. vanilla

2 1/4 cups flour

1 (12-oz) pkg. semisweet chocolate pieces

3/4 cup chopped peanuts

1/2 cup crushed peanut brittle


Directions:

In an extra-large mixing bowl beat together the butter and shortening with an electric mixer on medium speed for 30 seconds. Add brown sugar, granulated sugar, baking soda and salt. Beat mixture until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla. Using a wooden spoon, stir in the flour until combined. Stir in chocolate pieces and peanuts.

Drop dough by rounded teaspoons 2 inches apart on ungreased cookie sheets. Flatten slightly with the back of a spoon. Sprinkle 1/2 tsp. of the crushed peanut brittle in the center of each cookie.

Bake at 350 for 9 to 11 minutes or until centers appear set. Cool on cookie sheet for 1 minute. Transfer cookies to a wire rack and let cool. Makes about 48 cookies.
