Mashed Potato Dumplings

This recipe transforms leftover mashed potatoes into a whole new tasty dish!


Ingredients:

1 cup cold mashed potatoes

1/2 - 1 cup all-purpose flour (more if needed)

1 egg

salt and pepper (to taste)


Directions:

In a bowl, mix all the ingredients; until it forms a stiff dough. Roll out dough on a floured surface and continue adding small amounts of flour and kneading the dough until it can be worked without being too sticky.


Roll into 2-inch balls.


Bring a kettle of water to boil. Drop dumpling balls into boiling water. Simmer for about 10 minutes or until dumplings are all floating to the surface of the water and cooked through.


Drain and serve with a chicken gravy.


Note: You can also make dumplings much smaller and add them to any stew or soup.


Variation:


Dessert Dumplings: Serving the plain dumplings with a little melted butter and a cinnamon/sugar mixture can make a great dessert!  


Fruit Dumplings: When forming the dough into balls, fill each dough ball with a cut of fruit . . . apples, peaches, plums, and mango are all favorites! . . . cook and serve with melted butter and a cinnamon/sugar mixture.
