Fried Vegetables (Efo Riro)

Onions (lots!! Chopped in very long, thin rings!)

Jama Jama Leaves

Meat (or mushrooms), optional

Spices . . . Salt, Black Pepper, Red Pepper, Garlic, Ginger, Green Onions, Green Peppers

Tomatoes (Not too many, just enough to balance out the palm oil – but cut them thin or minced!)

Red Palm Oil

Canola Oil


Directions:

Saute onions in combination of Palm oil and Canola Oil. Add tomatoes, green peppers, and spices.

Cook until soft and juicy. Add pre-cooked meat (or mushrooms) and saute until meat is heated through. Add jama jama and cook until soft (do not over cook the jama jama leaves!).

Serve over rice or foo-foo.
