Baked Egg and Mushroom Bacon Cups

Ingredients:

bacon

baby spinach leaves, chopped

grated cheese

mushrooms, sliced

eggs


Directions:

Preheat oven to 350 degrees. Grease large muffin tin. Line each muffin hole with bacon. Add chopped spinach. Add a couple slices of mushroom. Crack an egg into each cup. Sprinkle some grated cheese on top. Cover with tin foil and bake for about 30-35 minutes, or until eggs are fully cooked and bacon is lightly golden. Leave in tins 5 minutes more before removing.
