Enchiladas

Jungle Camp


Have ready:

2 cups fried ground beef, sausage or cooked chicken

1 chopped onion, raw or fried

2 to 3 cups grated cheese

12 corn tortillas


Combine and simmer 10 minutes:

2 to 3 cups tomato sauce

1 tsp. salt

1 to 2 cloves garlic, minced

1 to 2 tsp. chili powder or more to taste

1/2 tsp. ground cumin (optional)


Cook then dip tortillas in sauce. Place on each tortilla in layers:

Onions and grated cheese


Roll tortillas up and place side by side in a greased 9x13 baking pan. Pour remaining sauce over the tortillas. Top with grated cheese and red pepper, if desired. Bake uncovered at 350 for 30 to 35 minutes. Makes 6 servings.
