French Fries

Ingredients:

Canola oil for deep frying

1 potato (per person)


Directions:

In deep saucepan or deep fryer, heat oil or shortening to 375 degrees. Wash and scrub raw potatoes. Peel or leave skins on. Cut into thin strips 1/4 to 3/8 inch wide. Dry potatoes well with paper towels. Fry a few potatoes at a time 5 to 8 minutes, turning occasionally until golden brown. Remove with slotted spoon; drain on paper towels. Salt to taste.


Note: For extra crispy fries, remove french fries from the hot oil right as they are beginning to float on top of the oil but before they turn golden brown. Allow to cool until warm but not hot. Then put back in the oil to “double fry” until they turn golden brown. This method of cooling and then double frying causes the french fries to be extra crispy.
