Spectacular Fruit Pizza

Crust:

1/2 cup shortening

3/4 cup flour

1/2 cup sugar

1/2 tsp. baking soda

1/2 cup brown sugar

1/2 tsp. salt

1 egg

1 1/2 cups quick oatmeal

1 tsp. vanilla

Beat shortening and sugars until fluffy. Add egg and vanilla; beat well. Add dry ingredients and mix well. Chill for at least an hour. Press into lightly greased large pizza pan and bake at 350 for 15 minutes. Crust will not be browned.


Filling:

1 (8-oz.) pkg. Cream Cheese, softened

1 (6-oz.) pkg. Whipped Topping

1 pt. fresh strawberries, halved*

2 to 3 bananas, sliced*

2 to 4 Kiwi, peeled and sliced*

1 (8-oz.) can pineapple tidbits*

Blend cream cheese with whipped topping. Spread over cooled crust. Arrange strawberries around outer edge of Cookie Crust. Arrange banana slices in a circle next to strawberries, then kiwi. Mound pineapple in center.


*or fruit of choice


Orange Sauce:

1/2 cup sugar 1/2 cup orange juice

1 Tbsp. cornstarch 1/4 cup water

2 Tbsp. lemon juice Dash of salt

1/2 tsp. grated orange peel

Combine Orange sauce ingredients in small saucepan. Bring to a boil and boil for 1 minute, stirring constantly. Cool and spoon sauce over fruits. Garnish with strawberry wedges in center; chill Cut in pie wedges and serve.


Serves 12.
