Garbanzo Bean Casserole   

Ingredients:

1 onion, chopped  

2 cloves garlic

2 Tbsp. oil

4 carrots, sliced

2 celery stalks, chopped

2 cups cabbage

2 cups cooked garbanzo beans

2 cups cooked kidney beans

2 cups stewed tomatoes, plus juice

1 1/2 tsp. vegetable seasoning

1/2 tsp. basil

1 tsp. thyme

1/4 tsp. cayenne

2 Tbsp. soy sauce


Directions:

In a large Dutch oven, sauté the onion and garlic in oil until golden. Add the carrots, celery and cabbage and cook for 5 minutes. Add the remaining ingredients and stir to combine. Cover with the lid and bake at 350 for 1 hour. Makes 8 servings.
