Groundnut Cakes

Ingredients:

1 cup roasted, shelled and skinned peanuts

1/2 cup sugar

2 Tbsp. Water


Directions:

Crush the nuts with a rolling pin until they are coarse, fairly even bits. Dissolve the sugar in water over medium heat. Cook without stirring until golden brown. Add the peanuts and mix well. Pour out on a wet or greased board. Press out into flat sheet about 3/8 inch thick. A glass jar works well for this. Cut into diamonds, or break into pieces.
