Hawaiian Lime Pie
Ingredients:
1 can (9-oz) crushed pineapple
1/4 tsp. salt
1/3 cup sugar
2 eggs, separated
1 pkg. lemon or lime gelatin
1/4 cup lemon juice
1/4 tsp. Cream of Tarter
1/4 cup sugar
1/2 cup whipped cream
Directions:
Combine un-drained pineapple, salt, 1/3 cup sugar and egg yolks in top of double
boiler. Stirring frequently, cook about 15 minutes or until mixture thickens. Remove
from heat, add gelatin and stir until dissolved. Stir in lemon juice. Chill until
partly set. Beat egg whites with cream of Tarter until whites hold stiff peaks. Gradually
add ¼ cup sugar, beating until mixture is stiff and glossy. Fold egg mixture into
gelatin. Pile lightly in pie shell. Chill until firm. Serve with whipped cream.
