Holly's Peanut Brittle

Holly's brittle is paper thin and melts in your mouth.


Ingredients:

1/4 cup water

1 cup sugar

1/4 cup corn syrup

2 Tbsp. butter

3/4 cup raw peanuts

1/2 tsp. salt

1/4 tsp. baking soda

1/4 tsp. vanilla


Directions:

Using wooden spoon, stir corn syrup, water and sugar to boiling over med. heat; scraping sides.

Stir in butter and cool to 260 degrees without stirring. Add peanuts. Cook gently, stirring with thermometer to 310 degrees. Remove from heat and add salt, vanilla, and baking soda. Spread on 2 greased aluminum cookie sheets in 3 parts. Cool slightly, then turn and stretch as thin as possible.
