Master Mix Pancakes

This recipe is prepared in two stages. First you prepare what is known as the “Master Mix” which is basically just all the dry ingredients needed for making the pancakes. This “Master Mix” is meant to be prepared in advance and can make several batches of pancakes, which means you can just prepare the “Master Mix” once and it can last you for several weeks or even months.

The next step is when you are ready to make the actual pancakes, you just measure out as much of the “Master Mix” you need for the morning and add the wet ingredients to complete your pancake batter.


It may sound like a lot of work to have to prepare the “Master Mix” in advance, but the real advantage to doing it this way is that it can really help to speed up the morning’s breakfast preparations because most everything is already measured out and prepared, you really just have to add eggs, water and oil and you’re ready to go!



To Make the Master Mix:

In a large mixing bowl combine 6 cups of flour (we typically mix half wheat flour and half white flour), 6 Tbsp. sugar, 6 Tbsp. baking powder, and 1 Tbsp. salt. Mix well and store in an airtight container.


To Make the Pancakes:

Measure out 2 cups of the "Master Mix" into a mixing bowl. Add 1 egg, 1-1/4 cup milk, and 2 Tbsp. Oil.


Use a whisk to mix the batter until all the dry ingredients are moist, but be careful not over mix!

Drop by spoonfuls on hot, greased skillet to form pancakes. Cook until the bubbles that form in the batter begin to pop and leave crevice holes in the pancake. Flip and cook the other side another 2-5 minutes until golden brown.


Variations:

Blueberry Pancakes: For an added treat, we often like to add fresh blueberries to the batter before frying the pancakes. This is especially delicious when served with jam or topped with a Fresh Fruit Syrup.


Master Mix Waffles: Prepare the same say as the pancakes, but add 1 Tbps. vanilla. Cook on hot waffle iron. Makes three 9 inch waffles. For lighter waffles, add beaten egg yolk to milk. Fold in stiffly beaten egg whites.
