Basic Crunchy Granola

There is so much you can do with just this basic granola recipe, it leaves a lot of room for flexibility regarding what all you put into it – just follow the basic recipe and add whatever additional ingredients you like!


Ingredients:

4 cups uncooked oatmeal

1/2 cup nuts or seeds

1/2 cup dried fruit

1/4 cup roasted coconut

1/3 cup sugar

1/2 tsp. salt

1 Tbsp. cinnamon

1/3 cup oil

2/3 cup honey

1 tsp. vanilla


Directions:

Combine all the dry ingredients in a 9x13” pan and set aside. Combine all the wet ingredients separately and pour this wet, sticky mixture over the dry ingredients. You may need to use your hands to work the mixture and thoroughly mix everything together.


Bake at 300° for 30-50 minutes until golden brown. As it is baking, you will need to remove the granola from the oven ever 10 minutes to give it a stir to keep it from burning. The mixture will not appear to be very crunchy yet, but it will harden more as it cools.


Here are a few ideas of things you can add to your granola: peanuts, almonds, pecans, walnuts, sunflower seeds, flax seeds, raisins, dried cranberries, dried blueberries, coconut, or dark chocolate chunks. You can also use coconut oil as a substitute for regular cooking oil if you prefer.
