Light and Fluffy Pancakes

These pancakes are amazing! The incredible flavor of home cooking but with the light and fluffy consistency of restaurant or package mix pancakes. My best friend, Samantha Seven, originally gave me a great pancake recipe, but I've ended up tweaking it so much over the years that it's nothing like the original anymore . . . so here's my own recipe for pancakes, which has been a real hit in our home!


Ingredients:

2 cups flour

5 tsp. baking powder

1 tsp. salt

2 Tbsp. sugar

1/3 cup margarine

2 eggs

1-1/2 cups milk


Directions:

Combine dry ingredients together in a medium bowl. Add margarine and cut in with fork or pastry cutter.


Create a little space in the middle of the flour mixture for cracking the eggs and whisking them briefly. Add milk to the whisked eggs and stir everything together until all the dry ingredients are moist. Do not over mix; batter will still be lumpy!


Drop by spoonfuls on hot, greased skillet to form pancakes. Cook until the bubbles that form in the batter begin to pop and leave crevice holes in the pancake. Flip and cook the other side another 2-5 minutes until golden brown.
