Plantain Chips
Ingredients:
Large green plantains
Oil for deep fat frying
Salt to taste
Directions:
Peel plantain and grate or shred into thin circles. Heat oil to deep fat frying temperature.
Fry heap-fulls of shredded plantain until golden brown. For crisper chips remove
plantain when half cooked, heat oil to higher temperature and fry again. The chips
get brown and crisp very quickly. Drain on absorbent paper and salt to taste.
