Stuffed Green Peppers  

Cover with water, simmer 3 minutes and drain:

4 medium peppers, with tips and membranes removed

Fry separately: 2 Tbsp. butter

2 Tbsp. chopped onion

2 Tbsp. chopped celery


Add and brown:

1 cup ground beef


Add to meat mixture and heat well:

1 bouillon cube

1/3 cup hot water

1/2 cup cooked tomatoes


Fold in:

1 1/2 cups rice


Stuff peppers and place in greased shallow baking dish. Bake at 400 for 25 minutes.

Can also add cooked kidney beans, cheese, or corn if desired.
