Sweet and Sour Sauce
Ingredients:
1 cup Chicken Stock, strained
1/4 cup honey
1/8 tsp. ground ginger
2 Tbsp. butter
1/3 cup unsweetened pineapple juice
4 Tbsp. lemon juice
2 Tbsp. soy sauce
2 Tbsp. cornstarch
3 Tbsp. water
1 1/2 cups pineapple chunks
1/4 cup slivered almonds, toasted (optional)
Directions:
Combine the stock, honey, ginger, butter, pineapple juice, lemon juice and soy sauce in a saucepan and stir. Mix the cornstarch with the water and drizzle into mixture in the saucepan, stirring constantly. Bring to a boil. Reduce to simmer and cook, stirring constantly, until sauce thickens. Add pineapple chunks and continue cooking, stirring as needed, until sauce is nice and clear. Add almonds before serving.
